Apparently I liked this enough to send it to my sister. But I don’t remember it so I’ll have to try making it again. Hard to go wrong with polenta and cheese, two of my favorite things.
Layered Afghan Eggplant Borani
The flavors in this recipe didn’t totally work for me. I had a hard time finishing it. I wouldn’t make it again.

Pretty yummy. I try not to use the oven in the summer, which presents a challenge for cooking squash. This recipe only uses the stove, is pretty fast, very easy, and tastes good.
Lentil and Mushroom Stew over Potato-Parsnip Mash
I enjoyed this. Not an all time favorite but solid. I’ll make again.
