Braised Seitan with Brussels, Kale, and Sun Dried Tomatoes

This recipe from page 182 of Veganomicon sounded so good. I like all the component parts. Seitan? Yes! Brussel sprouts? Yes! Kale? Yes! Sun dried tomatoes? Yes! But it was surprisingly mediocre. The flavors just kind of didn’t work together and nothing stood out. Dare I say it was…bland?
